Chad Salad (Salade Du Tchad)

This Chad salad was a delicious starter for our meal, a wonderful vegetarian dish that has a really nice spicy, honey and lemon dressing. The combination of cucumber with bananas was certainly different but the cucumber added a perfect texture and the bananas a nice sweetness along with the raisins. This unique Chad salad would be a great side dish to any meal.

Clearly the pairing of cucumbers and bananas seems like a very strange combination, but we really liked it.  Served also with brown rice, raisins and almonds, it was the spiced up dressing with honey that really made the salad come all together.  What is the weirdest pairing of items you have tried and loved.  This would be right up there on my list as a unique combination.  I remember making another brown rice recipe that had tomatoes, onions, peanut butter and bananas in it.  My husband said he wouldn’t eat it, it turned out to be a dish he requests often.  My point is you just never know until you try.  This Chad salad is one of those recipes.

Salade Du Tchad (Chad Salad)

A truly unique salad that pairs bananas and cucumbers, you just might be surprised!

Ingredients

  • 1 cup long-grain brown rice
  • 1 small cucumber
  • 2 bananas
  • ¼ cup raisins
  • 1 Tablespoon almonds chopped
  • 4 Tablespoons olive oil
  • 4 teaspoons lemon juice
  • Zest of 1 lemon finely grated
  • 1 teaspoon salt
  • 1/2 teaspoon ground coriander seeds
  • 1/2 teaspoon ground cumin seeds
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon honey

Instructions

  • Wash the rice thoroughly then cook following package instructions.
  • Once cooked set aside to cool.
  • Slice the cucumber finely then peel and slice the bananas.
  • Combine the rice, cucumber, bananas, raisins and almonds in a salad bowl.
  • Mix gently to combine.
  • For the dressing, whisk together the olive oil, lemon juice, lemon zest, salt, spices and honey in a bowl.
  • Pour this dressing over the salad ingredients. Toss to mix then chill in the refrigerator for at least 30 minutes before serving.

Chad Roast Chicken (Poulet Rôti Tchadienne)

This Chad roast chicken was super simple to make, tender and delicious. It would rival any rotisserie chicken anywhere. The skin was amazing with a wonderful crunch to it. I will make this often. Serve with courgette with peanuts for a real treat.

I always wonder why on earth I don’t roast chicken more often.  It is so easy to make and I end up with left overs that I can usually turn into two other meals.  We loved this Chad roast chicken served with  mashed zucchini dish with peanuts, it almost felt like a Thanksgiving meal.  I like to make a Chinese chicken salad or enchiladas with the leftovers.  How do you like to use left over roasted chicken?  Please let me know in the comments below.  I know you are not supposed to eat the skin, but the way this chicken is cooked it is awfully hard to resist that perfect crunch.

Poulet Rôti Tchadienne (Chad-Style Roast Chicken)

This chicken is juicy, tender with a crunchy skin.  We loved it served with the mashed zucchini.  You should try it!

Ingredients

  • 1 Whole chicken
  • 1 Tablespoon Butter
  • 1 bunch parsley
  • 2 Tablespoons oil
  • Salt and freshly-ground black pepper to taste

Instructions

  • Wash and pat the chicken dry.
  • Season liberally inside and out with the salt and black pepper.
  • Place the butter in the body cavity along with several sprigs of parsley.
  • Rub the oil over the outside.
  • Place the chicken in a roasting tin and set it either in a 400 degree oven and roast for 20 minutes per lb. (flip the chicken over half way through to crisp the skin on the other side. Alternatively place (still in a roasting tin) on a hot barbecue and cook, turning frequently, for 30 minutes per lb.
  • During the cooking baste the chicken either with oil or with the pan juices.
  • Take the pan juices from roasting the bird and blend the pan juices with water to form a gravy.
  • Serve the chicken on a warmed plate, accompanied by the sauce, garnish with parsley sprigs.

Chad Zucchini with Peanuts (Courgettes with Peanuts)

Chad Zucchini with peanuts was a real surprise for me. I had never contemplated mashing zucchini before and it was awesome, a perfect companion to the perfectly roasted Chadian style chicken. These recipes from Chad are simple and delicious, you should try them!

Now that I have had a chance to think about it, many vegetables can be mashed, why not carrots or parsnips?  Courgettes as they are called in Chad is the French name for Zucchini.  Did you know that French is an official language of this African nation?  If you would like to learn more be sure to check out “Our Journey to Chad“.  Peanuts are a very important subsistence crop for the people of this poor nation.  They make a delicious topping with great added texture in this lovely side dish. If you don’t eat peanuts, you could substitute any kind of nut and it would be just as delicious.

Chad Courgette with Peanuts (Zucchini with Peanuts)

Yes, mashed zucchini is delicious, especially topped with some nuts and served alongside roast chicken.  Who knew?

Ingredients

  • 4 smalll courgettes zucchini
  • 1/2 tsp salt
  • 2 tbsp butter or oil
  • ½ cup unsalted peanuts chopped

Instructions

  • Simmer the whole courgettes in about 1 cup of salted water until very tender (about 10 minutes).
  • Combine the courgettes and butter then mash to a smooth consistency.
  • Top with the nuts and serve immediately.

Chad – Jus de Fruit (Fruit drink)

Chad Jus de Fruit is a refreshing drink made with fresh fruit, milk, ice and a hint of cardamom and nutmeg. Many stands are found on street corners selling this Chad jus de fruit, a truly refreshing drink. Depending on what fruit is in season is what normally is used however it is also made with a mixture of fruits as well. Common fruits in Chad would be mango, pineapple, orange, papaya and guava.

I made our Chad Jus de Fruit with pineapple and absolutely loved it!  I also love adding spices to dessert drinks.  The nutmeg and cardamom hit all the right notes.  This would make a lovely smoothie for breakfast as well as dessert.  What is your favorite flavor fruit smoothie.  Do you like to mix your fruits or just keep one flavor profile?  Please let me know in the comments below.  I am certain that this recipe would work with just about any fruit you can think of.  Even just a hint of vanilla would be lovely.  Be creative, this is one of those recipes that you can easily adapt to your liking. Chad Jus de Fruit

A fruit drink made with milk, ice hints of cardamom and nutmeg.  You choose the fruit.  A refreshing drink called jus de fruit that is served in carts along the streets of Chad.

Ingredients

  • 1 1/2 cups Pineapple cut up or fruit of your choice
  • 2 cups Whole milk
  • 3 Tbsps Sugar
  • 1 cup Ice
  • 1/4 teaspoon cardamom
  • 1/8 teaspoon nutmeg

Instructions

  • Put all the ingredients into a blender and blend well. 
  • Serve immediately or put into the refrigerator until ready to serve.  Shake before pouring or re-blend.
