Ingredients
  • 1 qt. container, a large mason jar works well
  • 1 large ripe tomato, cored and finely diced
  • 1 medium white or yellow onion, diced
  • ½ red bell pepper, cored, seeded and finely diced
  • ½ cup extra-virgin olive oil
  • ⅓ cup white wine vinegar
  • ¼ cup water
  • 1 garlic clove, minced
  • 1 tablespoon fresh Thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
Instructions
  1. Put all the ingredients in the mason jar and shake well.
  2. Refrigerate for up to one day before serving.
