Malagasy Lasopy (Pureed Vegetable Soup)

Ingredients

  • 1/2 lb.. of beef or pork bones
  • 2 roma tomatoes diced
  • 1 turnip peeled and diced
  • 2 green onions or leeks chopped
  • 2 carrots peeled and sliced
  • 1 1/2 cups of green beans cut into pieces
  • 1 1/2 quarts water
  • salt and pepper to taste

Instructions

  • Place the water in a large stock pot and add in all the ingredients
  • Bring everything to a boil and then cover and reduce the heat to a simmer
  • Once the vegetables are soft, remove the bones.
  • Use an immersion blender to puree or carefully pour the vegetables and liquid into a blender doing it in batches if necessary.
  • Serve with sakay and a French Baguette, serve warm
