Haitian Blancmange (A Coconut Gelatin Dessert)

Ingredients

  • Two 12oz cans Evaporated Milk
  • One 12oz can Coconut Milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon Cinnamon Powder
  • 3 packages Gelatin
  • 3/4 cup of boiled water
  • Zest of one lime
  • Sugar to taste
  • One 12 oz. can Fruit Cocktail

Instructions

  • Dissolve the gelatin in 3/4 cup of boiled water. Place evaporated milk in a large saucepan. Add sugar to a taste then bring to a boil. Add cinnamon powder, vanilla extract, and lime zest to mixture. Add the gelatin to milk mixture. Then add coconut milk and add sugar to a taste. Drain fruit cocktail and add to mixture, or use it to decorate with after it is set, your choice. Mix well and place in a large bowl or use a gelatin mold. Refrigerate for at least a 6 hours prior to serving. decorate with the fruit if you did not add it to the gelatin.
