Dominica Fig Flats

Ingredients

  • 4 Green plantains figs as they are called in Dominica
  • 1/2 Bell Pepper finely diced
  • 3 Green & Red Seasoning Pepper a combination of hot peppers
  • Salt to Taste
  • 1 Onion finely diced
  • 3 cloves Garlic minced
  • Goya Seasoning
  • Water
  • Oil
  • Note: Tuna Fish or Cod Fish can also be added.

Instructions

  • Peel the green plantains (figs as they are commonly called) then dice into small pieces.
  • Put in boiling water on low fire with salt, allow boiling until tender.
  • When boiled tender, drain water and place the diced green bananas into a bowl.
  • Use a fork or potato masher to mash the bananas.
  • Mix in the onion, garlic, bell pepper and seasoning peppers and a bit of Goya Seasoning to taste. When done, mix all ingredients together thoroughly. Let sit in the bowl till slightly chilled.
  • Now take a large spoon and scoop up a ball then flatten to about half an inch.
  • Fry in oil over medium heat until they are golden brown.
  • Serve hot.
