Ingredients

  • 1 head romaine lettuce chopped into bite size pieces
  • 2 medium roasted beets sliced
  • 2 carrots grated
  • 1/2 inch ginger freshly grated
  • 1 lemon juice of
  • salt and pepper to taste

Instructions

  • In a small bowl whisk together the lemon and grated ginger add salt and pepper to taste.
  • In a salad bowl, add in the all the remaining ingredients.
  • Pour over the dressing and toss gently and serve.
