- 1 head romaine lettuce chopped into bite size pieces
- 2 medium roasted beets sliced
- 2 carrots grated
- 1/2 inch ginger freshly grated
- 1 lemon juice of
- salt and pepper to taste
In a small bowl whisk together the lemon and grated ginger add salt and pepper to taste.
In a salad bowl, add in the all the remaining ingredients.
Pour over the dressing and toss gently and serve.
