Micronesian BBQ (Marinated Chicken and Pork Ribs)

Ingredients

  • For the marinade
  • 1 cup soy sauce
  • 1/2 cup distilled white vinegar
  • 1 tablespoon olive oil
  • 2 1/2 tablespoons sugar
  • 1/2 cup water
  • 1/2 yellow onion finely diced
  • 6 cloves garlic peeled and sliced.
  • Optional:
  • diced red chili
  • 1 pound chicken pieces with skin
  • 1 pound pork ribs
  • juice of 1 orange plus zest

Instructions

  • Combine all ingredients in a large bowl then place in a gallon size freezer bag along with the meat or fish you will be cooking for the BBQ.
  • Leave in refrigerator overnight if using meat of a couple hours if using fish.
  • BBQ over hot coals, until cooked through, basting while cooking.
  • Enjoy along side sweet potatoes and bananas for an authentic Micronesian meal.
  • Serve on a banana leaf.
