Ingredients
For the marinade
1
cup
soy sauce
1/2
cup
distilled white vinegar
1
tablespoon
olive oil
2 1/2
tablespoons
sugar
1/2
cup
water
1/2
yellow onion finely diced
6
cloves
garlic
peeled and sliced.
Optional:
diced red chili
1
pound
chicken pieces with skin
1
pound
pork ribs
juice of 1 orange plus zest
Instructions
Combine all ingredients in a large bowl then place in a gallon size freezer bag along with the meat or fish you will be cooking for the BBQ.
Leave in refrigerator overnight if using meat of a couple hours if using fish.
BBQ over hot coals, until cooked through, basting while cooking.
Enjoy along side sweet potatoes and bananas for an authentic Micronesian meal.
Serve on a banana leaf.
