Luxembourg Green Bean Soup

Ingredients

  • 1/2 lb. sliced green beans
  • 1 1 lb peeled and diced potato
  • 1 white onion diced
  • 4 slices of bacon
  • 1/2 pint cream or sour cream
  • cooked sausage slices optional
  • salt and pepper to taste

Instructions

  • Take the beans, potato and onion and put in a pot and cover with water by an inch or two
  • Cover and boil in the water until soft
  • Meanwhile fry slices of bacon and add bacon bits and the fat into the soup pot
  • Add in about 1/2 pint of cream and simmer
  • Salt and pepper to taste
  • Serve in bowls and add a slice of cooked sausage (Optional)
