Kuwait Elbah (Vanilla custard)

Ingredients

  • 5 eggs
  • 2 1/2 cups whole milk
  • 1/2 cup of sugar or more if you like it real sweet
  • a nice pinch of saffron
  • 1/2 teaspoon cardamom
  • 2 teaspoons vanilla

Instructions

  • Preheat oven to 300 degrees
  • In a large bowl, mix eggs, sugar and vanilla together well (it is best to use a mixer)
  • Add milk and continue mixing
  • add in in the saffron and cardamom
  • Pour or ladle mixture into oven safe ramekins taking care to not overfill
  • put the ramekins in a roasting pan and fill halfway up with warm water
  • Cover the whole pan with tin foil
  • Put tray in oven for 45 minutes
  • Remove when cool enough to handle and refrigerate for 4 hours
  • serve chilled with coffee or tea
