Bajan Style Fish Cakes
Wonderful light and easy fish cakes from Barbados served with a Marie Rose sauce.

- 2 tablespoons oil
- 1 cup onions chopped finely
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg beaten
- 3/4 cup milk
- 1 Tablespoon butter melted
- 2 Tablespoons Bajan seasoning
- 1/2 lb. salted cod fish cooked and flaked
- 1 large scotch bonnet pepper finely chopped
- For the sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon fresh lime juice
- Worcesteshire to taste
- Tabasco to taste
- 1 tablespoon sugar
In a frying pan, heat the oil to medium high heat, sauté the onions until soft.
In bowl mix together, flour, baking powder and salt.
Add in the egg, butter and milk. Mix together until just incorporated.
Add in the onions, Bajan seasoning, salted cod fish, and pepper.
Mix well.
In a frying pan, heat oil to medium high for frying. Drop the batter by the tablespoon into the hot oil.
Once golden brown, flip and cook on other side until golden, remove and place on paper towel to drain any excess oil.
Serve hot with Marie Rose sauce.
For the sauce:
mix all ingredients together and serve can be refrigerated up to 1 week.
