Bajan Style Fish Cakes

Wonderful light and easy fish cakes from Barbados served with a Marie Rose sauce.

Ingredients

  • 2 tablespoons oil
  • 1 cup onions chopped finely
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg beaten
  • 3/4 cup milk
  • 1 Tablespoon butter melted
  • 2 Tablespoons Bajan seasoning
  • 1/2 lb. salted cod fish cooked and flaked
  • 1 large scotch bonnet pepper finely chopped
  • For the sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon fresh lime juice
  • Worcesteshire to taste
  • Tabasco to taste
  • 1 tablespoon sugar

Instructions

  • In a frying pan, heat the oil to medium high heat, sauté the onions until soft.
  • In bowl mix together, flour, baking powder and salt.
  • Add in the egg, butter and milk. Mix together until just incorporated.
  • Add in the onions, Bajan seasoning, salted cod fish, and pepper.
  • Mix well.
  • In a frying pan, heat oil to medium high for frying. Drop the batter by the tablespoon into the hot oil.
  • Once golden brown, flip and cook on other side until golden, remove and place on paper towel to drain any excess oil.
  • Serve hot with Marie Rose sauce.
  • For the sauce:
  • mix all ingredients together and serve can be refrigerated up to 1 week.
