Coconut Rice and Peas

A simple side dish with a Caribbean flavor with just a hint of coconut.

Ingredients

  • 1 cup basmati rice
  • 2 cups coconut water
  • ½ cup frozen peas or fresh if you can find them

Instructions

  • Rinse rice per package directions
  • Cook substituting coconut water for regular water
  • Bring to boil
  • Cover and simmer until rice is tender and water absorbed 15-20 minutes
  • Stir in the fresh or frozen peas
  • Serve warm
