Cyprus Halloumi with Watermelon

The perfect ending to our Cyprus meze!  You really can’t go wrong with more halloumi.  The cheese is delicious and grilled next to watermelon was a wonderful salty and sweet bite.  I would love to be able to enjoy this style of eating more often.  So relaxed and a wonderful journey. Thanks Cyprus!

Cyprus Halloumi with Watermelon

Ingredients

  • halloumi cheese 1/2 lb. Cubed
  • watermelon slices Cubed
  • strawberries or other fruit in season
  • mint for garnish

Instructions

  • Grill the halloumi in a fry pan until warm and just turning golden brown.
  • Make single servings of one piece halloumi and one piece watermelon on a toothpick
  • Serve while the cheese is still warm
  • Garnish with mint and add in some other fresh seasonal fruit.
  • Enjoy!
