Fresh Pineapple and Mango

Fresh pineapple and mango simply cut up and served right inside the pineapple itself is a wonderful ending to any meal and especially satisfying after the fiery heat of our amazing Niger and Nigeria meal.  The sweetness and coolness of these tropical fruits is always a delight.  Dessert is not often served after a meal in West Africa but if it is, often fresh tropical fruits are enjoyed.  Sprinkle a bit of paprika for some added color.   Any fruit can be used, watermelon is also popular.

Fresh Pineapple and Mango

Ingredients

  • 1/2 fresh pineapple
  • 1 fresh mango
  • paprika for garnish

Instructions

  • Split the pineapple in half
  • Remove the flesh and cut up
  • Use the pineapple shell as the vessel for the fruit
  • Peel and cut up the mango
  • Mix together with the pineapple
  • Serve with a dash of paprika for garnish
  • Enjoy!
