Belarus Kraina Salata-Country Salad

Belarus calls this a country salad. A delicious beet root salad with an easy to make mayonnaise dressing. Serve with hard-boiled eggs and dill for a lovely starter salad. I just love the color of this salad, and it was so much fun to pull the beets straight from our garden.

Belarus Kraina Salata-Country Salad

Ingredients

  • 2 ½ Beet Roots
  • ½ Onion
  • 1 hard- boiled egg
  • 3 Tablespoons Sour Cream Mayonnaise
  • Salt to taste
  • For the Mayonnaise:
  • ½ cup vegetable oil
  • 1 egg yolk
  • 1 teaspoon mustard
  • Salt sugar and vinegar to taste

Instructions

  • Boil the beet roots until tender then peel and shred them
  • Peel and shred the onion
  • Peel and chop the egg
  • Mix the ingredients thoroughly, season with sour cream or mayonnaise and salt to taste. Put the ingredients in a serving bowl and decorate.
  • For the mayonnaise:
  • Mix together all ingredients and chill.

Belarus Rolled Stuffed Beef – Zrazy

Zrazy is what they call this rolled beef with porcini mushrooms, hard boiled egg and cornichon dish. Truly a delicious combination of flavors. Thank you Belarus, I will make this recipe many more times it was amazing! Oh and with those yummy potato pancakes……. Awesome

Belarus Rolled Stuffed Beef - Zrazy

Ingredients

  • 1 lb of beef thin sliced chuck or similar
  • 1 oz dried porcini mushrooms
  • ½ white diced onion
  • 2 hard- boiled egg
  • ½ cup rye bread crumbs
  • Cornichons
  • 2-4 Tablespoons pork fat
  • Salt and pepper to season

Instructions

  • Soak the mushrooms in 1 cup of water for 1-2 hours.
  • Remove mushrooms and slice, retain the water for use in the broth.
  • Fry the mushrooms and chopped onion together in a fry pan, add the bread crumbs and continue to fry for just a few minutes.
  • Put the meat slices between two pieces of plastic wrap and use a mallet to flatten each piece into about a 2- 3 inch wide and 4-5 inch long piece of beef.
  • Remove the wrap and season the meat with salt and pepper.
  • Put the mushroom and onion filling in a thin layer on each slice of meat and add 1 cornichon or sweet pickle and ¼ of a hard- boiled egg.
  • Roll the meat slices and secure with a skewer.
  • Fry the rolled beef in the pork fat over high heat to sear on all sides.
  • Pour in the water that you retained from soaking the mushrooms and stew on low heat for about 30 minutes.
  • Remove the beef rolls and thicken the sauce with a little flour, add back in the zrazy and cook for another 10- 15 minutes on low heat.
  • Remove the skewers and serve with stewed vegetables and Draniki.

Draniki – The National Dish of Belarus Potato Fritter/ Pancake

These potato and onion pancakes called draniki are a dream, crispy with delicious flavor, yeah I know they are fried in pork fat, but hey…. everything in moderation…. Right? Once you try them, you will understand why they are the national dish of Belarus… Yummy!

Draniki – The National Dish of Belarus Potato Fritter/ Pancake

Ingredients

  • 2 lbs. russet potatoes
  • ½ White Onion
  • 2-4 Tablespoons pork fat
  • 1 egg
  • Salt to taste

Instructions

  • Peel the potatoes and the onion.
  • Finely grate one potato and the onion into a bowl and mix well. Grate the remaining potato adding them to the mixture. (Please note the secret to this recipe is how finely you grate the potatoes and onion, it should be a pulp like consistency.)
  • Mix well, beat the egg, season it with salt and add it to the mixture.
  • You can add a couple teaspoons of water if you would like your pancakes to be a bit crispy which I would highly recommend.
  • Heat up the pork fat on high in a skillet and use about 1 tablespoon of mixture per fritter.
  • Fry until golden brown on each side.
  • Serve immediately and enjoy with sour cream.

Belarus Stewed Vegetables Tušjenyje Harodnina

These simple to make stewed vegetables were the perfect companion to the rolled stuffed beef dish called zrazy. Cook them to fork tender. The addition of the fresh dill as a seasoning was delightful.

Belarus Stewed Vegetables Tušjenyje Harodnina

Ingredients

  • 4 Carrots
  • 4 Parsnips
  • Fresh Dill Sprigs
  • 1 Tablespoon Butter
  • Salt and Pepper to taste

Instructions

  • Peel the carrots and parsnips, cut up to desired bite size pieces and stew in boiling water until tender.
  • Season with butter, salt and pepper and fresh dill, serve immediately.

Belarus Fresh Strawberries Sviežaja klubnicy

Belarus fresh strawberries, no recipe needed for this, just forage for some berries of any type, these beauties came straight from the garden. I cut them up and sprinkled them with just a touch of sugar which was really not necessary. Always a wonderful way to end a delicious meal with just a bit of fresh fruit.

  • 2 cups strawberries sliced
  • ½ teaspoon sugar optional

Instructions

  • Wash and slice the strawberries
  • Sprinkle with sugar and gently toss
