Finland Salmon stuffed with cheese and herbs is super easy to make and makes you look, well so gourmet.  The salmon served as one giant filet makes for a beautiful presentation.  The taste is also lovely. You guests will love it.  Serve it with some new potatoes and pickled cucumbers for a real Finnish feast.

    Ingredients

    • 2 lb. salmon fillet
    • black and lemon pepper
    • salt
    • lemon juice
    • Stuffing:
    • Cream cheese
    • Fresh dill chives and thyme, chopped finely

    Instructions

    • Season the fish fillet with salt and black and lemon peppers to taste. Using a sharp knife, cut about a one inch deep opening in the middle of the fillet from head to tail. Place the knife in the opening and cut a pocket to both sides of the opening. Unfold the pockets and spread the cheese in. Sprinkle finely chopped dill, chives and thyme on the cheese. Turn the upper side of each pocket on the cheese and herbs. If necessary, secure the opening with toothpicks. Sprinkle with lemon juice.
    • Bake in 200° C for about 20-25 minutes. When the fish is done, remove the sticks.
    • Serve immediately with boiled potatoes.
