Iranian fresh herbs and vegetables (Sabzi Khordan)

Iranian fresh herbs and vegetables called Sabzi Khordan is a plate that you will find on the table for every main meal.  This is one way to achieve the hot and cold balance of food plus it is super healthy for you.  You can make up the platter with whatever is fresh and  in season but be sure to make it beautiful.  The Iranians always make a wonderful presentation with their food.  This dish is often served with cheese as well.  Enjoy and eat up those herbs and veggies, they are really delicious!

Iranian fresh herbs and vegetables (Sabzi Khordan)

Ingredients

  • Use a bunch of each of the following herbs all of any combination of the following
  • Basil
  • Tarragon
  • Mint
  • Chives
  • Parsley
  • Cilantro
  • Dill
  • Scallion
  • Radish
  • Watercress
  • cucumber

Instructions

  • Trim the vegetables and remove the stems as desired Remove the leaves of radishes and the outer leaves of the scallions Make sure every vegetable is trimmed into small and bite-size pieces.
  • Wash all vegetables thoroughly, put them in a salad spinner to dry or use towels.
  • Place on a platter and serve.
