    Israeli Salad

    Israeli salad is a typical salad found all over the Middle East. Made with the freshest ingredients, it is colorful, healthful and absolutely delicious. Tomatoes, cucumbers, peppers and onion with a lemony dressing pairs perfectly with the shawarma made of spiced grilled chicken.  The dressing is light and easy.  Enjoy this recipe as a side for just about any dish. You can also sprinkle in some of that healthful sumac for a  light lemony addition.

    Israeli Salad

    Ingredients

    • 2 extra large tomatoes
    • 1 cucumber
    • ½ medium red onion
    • 1/2 red bell pepper
    • 1/2 yellow bell pepper
    • ½ C herbs Italian parsley, mint or cilantro, or a mix
    • 1/2 of fresh Lemon juice
    • 4 Tablespoons olive oil
    • Salt and pepper to taste
    • sprinkle with sumac Optional

    Instructions

    • Chop the first 6 ingredients into a very small fine dice. The smaller, the better.
    • Place in a large bowl and toss with the lemon zest, olive oil, lemon juice, salt, pepper.
