    Akwadu (Baked Bananas)

    A bowl of akwadu baked bananas from West Africa

    Akwadu or baked bananas is a excellent way to conclude your African meal. The bananas are simply delicious, warm and sweet and would be wonderful for breakfast as well.

    Akwadu (Baked Bananas)

    A lovely dessert for any occassion

    Ingredients

    • 4 bananas
    • 1/2 cup shredded coconut
    • 1/2 cup orange juice
    • 1/4 cup brown sugar
    • 2 lemons juice of
    • 3 Tablespoons butter melted
    • cinnamon optional
    • honey optional

    Instructions

    • preheat oven to 400 degrees
    • peel and cut the bananas into chunks
    • Arrange them in a baking dish
    • pour the butter over and drizzle the orange and lemon juices
    • Sprinkle with cinnamon, brown sugar and coconut
    • Bake for 10 minutes
    • Remove from oven and drizzle over some honey
    • put oven to broil and brown for about 2 minutes but watch to make sure it does not burn
    • Remove and serve warm
