Canada is blessed to have oysters available year round. I was able to order some fresh oysters from my local supermarket. The key is to get them really fresh. I will show you how to shuck them without one of those shucking knives. It is absolutely worth the effort, these are delicious with simply a squeeze of lemon. Of course you could add some horseradish and hot sauce which are common condiments. We enjoyed them as part of our Canadian meal with a Classic Canadian Caesar. Delicious!
1 dozen fresh oysters in the shell
1 quart crushed ice
1 lemon, quartered
1 flat head screwdriver
1 sharp knife
Scrub the oysters so they are very clean using cold water.
Place the crushed Ice on your serving tray
Locate the hinge on the oyster (See Picture)
After you twist, you will notice the top shell moves slightly away from the bottom. However,there is a membrane located on both the top and bottom parts of the oyster. Using a sharp knife and taking care not to cut the oyster, slide in your sharp knife to cut the oyster from the membrane at the top of the shell. (see Picture)
You will do the same with the bottom shell, gently cut the bottom of the oyster away from the shell. (See Picture)
