Honduran Carne Asada (marinated beef)

Honduran Carne Asada is a marinated flank or skirt steak and grilled on the BBQ, a favorite pasttime of Honduran families. This marinade has beautiful citrus notes.  It calls for bitter orange and if you can not find them fresh, (they are not easy to find here in the US) then you can do one of two things, use a bottle version called naranja agria which means bitter orange in Spanish you can find in your local Latin market.  It will likely be from concentrate but is an okay substitute for the real thing.  The other possibility is to use a combination of fresh orange juice with lime juice, either way you will love the citrus flavor in this carne asada.  This is the main attraction on the typical plate (the national dish of Honduras).  Eat it with a little chimol or pico de gallo on top of the meat for a real treat!

Honduran Carne Asada (marinated beef)

This is a succulent way to cook beef, perfection!

Marinade 1 hour
Total Time 25 minutes

Ingredients

  • 2 lbs. beef flank or skirt
  • 1/2 cup bitter orange Juice see notes in post about bitter orange substitutes
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 2 teaspoons ground cumin
  • 1/2 cup olive oil
  • 1 Tablespoon Worcestershire sauce

Instructions

  • Cut the beef into strips, about 1-inch wide
  • Mix all ingredients (except the beef) in a bowl
  • Place the beef strips in the bowl and turn until completely coated with the marinade
  • Leave the beef in the marinade for at least 1 hour, however overnight is much better
  • Heat up your BBQ (if possible use hardwood coals for the best flavor
  • Place the beef on the BBQ and cook for approximately 7mins on each side.
  • serve with chimol

Notes

This recipe requires marinating time overnight is preferable but at least one hour.

Honduran Frijoles refritos (refried beans)

Honduran Frijoles refritos or refried beans is another staple food and part of the typical plate.  Both red beans and black beans are popular there.  This recipe is an easy version starting with canned red beans as opposed to soaking the beans and then cooking them until tender.  Of course you can do it that way if you prefer but it is nice to know you can whip these up using canned beans and reduce your prep time.  They were delicious and easy!  These are often served with tortilla chips and cheese for another lovely treat!

Honduran Frijoles refritos (refried beans)

Honduran beans can be made with red or black beans and be authentic.  They are delicious!

Ingredients

  • 2 cans red kidney beans
  • 2 Tablespoons cumin, ground
  • 6 Tablespoons oil or lard
  • 2 Tablespoons onion chopped
  • 2 Tablespoons green bell pepper chopped
  • 4 cloves garlic minced
  • Salt to taste

Instructions

  • Pour beans (and the water from the can) in a blender of food processor and blend until smooth.
  • Heat up oil or lard in frying pan.
  • Fry the onions, green bell peppers, and garlic at low heat until softened
  • Add the blended beans
  • Stir in cumin
  • Stir occasionally and simmer until reduced to your desired consistency it takes about 25 to 30 minutes.
  • Add salt to taste.
  • Add some grated cheese to garnish if desired.

Honduran Chicharones or pork crackling

Honduran chicharones  or pork crackling is loved all over the world.  What is not to love, pork belly braised slowly and then fried in its own rendered fat to crispy deliciousness.  Honestly this is one of my favorite things however you can only eat a little on a rare occasion for obvious reasons.  These are superb! It was served as part of the plato tipico or typical plate that is the national dish of Honduras, awesome!

Honduran Chicharones or pork crackling

Honestly this a bite of heaven.  On the rare occasion, when you want to indulge in some pork belly, you will be a super star with this simple recipe.

Ingredients

  • 1 lb. pork belly
  • 1 lime cut in wedges, to garnish
  • salt to taste
  • 1 tablespoon baking soda
  • 1 tablespoon salt

Instructions

  • Pat the pork belly dry
  • Mix together the baking soda and salt and rub it on the pork skin
  • Let it sit uncovered in the refrigerator for a couple hours
  • Rinse off the salt and baking soda and cut the pork belly into small pieces about 1/3" leaving the skin attached to the belly.
  • Put the pork belly in a skillet or wok and cover with water. Let the pork belly braise for a hour or two until the water evaporates and you only have fat left in the pan, Make sure to do this slowly over a low heat.
  • Once the pork fat has rendered, turn up the heat to high and fry until crispy and golden.
  • Drain excess fat on a paper towel and salt to taste
  • Enjoy with a squeeze of lime.
  • Heaven!

Honduran Platanos Fritos (Fried Banana)

Honduran Platanos Fritos is a very common side dish of fried plantain or banana as it is the main export of this country.  It is always served as part of the plato tipico or Typical plate, the national dish of Honduras.  Typically it is made with a very ripe black plantain, cut into fourths and fried.  The caramelized plantain is delicious with the refried beans and sour cream.  Honduran Platanos Fritos are sweet and savory at the same time.  Super easy to make and it would also be a lovely snack.

Honduran Platanos Fritos (Fried Banana)

Honduran Platanos Fritos are fried banana or plantains which are a must have ingredient on the Honduran typical plate.

Ingredients

  • 2 black plantains
  • oil for frying

Instructions

  • Cut off the ends of the plantain then cut it in half and then cut each half in half and remove the peel
  • Put oil into a frying pan or a deep fryer could be used and fry until golden brown.
  • Drain on a paper towel
  • Serve warm as part of the plato typico or with some sour cream as a lovely snack

Honduran Chimol (Pico de gallo)

Honduran Chimol or pico de gallo is a mild chopped fresh salsa.  It is a condiment on most Honduran tables and is used like a salsa on chips or a topping for grilled meat.  It is easy to make and you can adjust the salt and lime to your liking.  Hondurans do not eat spicy food so it is made with bell pepper that rates zero on the Scoville scale.  If you like a little spice go ahead and add in a serrano or jalapeno.  It is super with the carne asada.  Enjoy!

Honduran Chimol (Pico de gallo)

Honduran Chimol is a freshly made salsa that is a staple dish on Honduran tables.

Ingredients

  • 1/2 white onion
  • 1 green bell pepper
  • 1 tomato
  • 1/4 cup fresh coriander
  • 2 limes
  • Salt to taste

Instructions

  • Finely dice equal parts of onion, pepper, and tomato
  • Finely chop coriander
  • Mix everything in a bowl
  • Add salt and lime juice to taste
