Luxembourg green bean soup is found all over the country. It is called Bou'neshlupp and was light and superb. Often times they like to add sausage to this soup to make it heartier. We added just one little slice of a cooked chicken sausage. The green beans were cut and cooked until just tender with still a bit of bite. I used turkey bacon as my sister joined us for this meal and she does not eat red meat. It worked out great! I would highly recommend this soup for any occasion.
Luxembourg Green Bean Soup
Servings 4
Ingredients
- 1/2 lb. sliced green beans
- 1 1 lb peeled and diced potato
- 1 white onion diced
- 4 slices of bacon
- 1/2 pint cream or sour cream
- cooked sausage slices optional
- salt and pepper to taste
Instructions
- Take the beans, potato and onion and put in a pot and cover with water by an inch or two
- Cover and boil in the water until soft
- Meanwhile fry slices of bacon and add bacon bits and the fat into the soup pot
- Add in about 1/2 pint of cream and simmer
- Salt and pepper to taste
- Serve in bowls and add a slice of cooked sausage (Optional)
