A bowl of spicy Avocado sauce from Equitorial Guinea

This Equatorial Guinea Avocado sauce is excellent.  Serve it as part of fish with three sauces or by itself, it would be wonderful on just about any fish, chicken or beef.  This sauce was my favorite of the three. Enjoy!

Equatorial Guinea Avocado Sauce

A delicious sauce made with avocado's that was my favorite of the three sauces on the Equatorial Guinea Fish with three sauce.

Ingredients

  • 1/2 cup beef stock
  • 1/2 cup water
  • ½ chili pounded to a paste
  • ½ tomato chopped
  • 1 Tablespoon lemon juice
  • 1 large avocado thinly sliced
  • 2 Tablespoons peanut butter

Instructions

  • Bring the stock to a boil and add all the ingredients except the peanut butter. Reduce to a simmer and cook for 20 mins. Extract a few tablespoons of the broth, mix with the peanut butter and return to the pot. Cook for a further 10 mins, and serve warm
