Equatorial Guinea Peanut Sauce

A bowl of spicy peanut sauce from West Africa

This Equatorial Guinea peanut sauce was served as part of the fish with three sauces and it was my husbands favorite.  Peanut butter or ground nut sauces are loved throughout Africa and for good reason they are yummy!  Sometimes it is not served with a protein like fish but simply enjoyed with some fufu or boiled yams. Enjoy and adjust the heat to your liking.

Equatorial Guinea Peanut Sauce

A lovely sauce to serve with fish with three sauces from Equatorial Guinea

Cook Time 30 minutes

Ingredients

  • 2 cups chicken stock
  • ½ onion diced
  • Pinch oregano
  • 2 cloves garlic minced
  • 1 teaspoon lemon juice
  • 1 Tablespoon tomato paste
  • Pinch cayenne pepper
  • 1 cup peanut butter
  • ½ habanero chili pounded to a paste (or 1 green chili)
  • 2 bay leaves
  • Salt & pepper to taste
  • 3 Tablespoons oil

Instructions

  • Fry the onion and garlic in the oil until soft. Pound the tomato and chili together into a paste and add to the pan. Fry for a few minutes then add all the remaining ingredients. Bring to a boil, reduce to a simmer and cook, uncovered, for 30 mins or until desired consistency is reached.
