    Rotkohl (German Red Cabbage)

    German red cabbage called rotkohl is a wonderful and simple side dish.  The combination of flavors between the crisp cabbage and apple is lovely. This dish is loved and would compliment any number of German dishes but it went especially well with our sauerbraten and potato dumplings. Enjoy!

    Rotkohl (German Red Cabbage)

    Ingredients

    • 1 head red cabbage shredded
    • 1 apple grated (you can leave the skin, just remove the seeds)
    • ½ c apple cider vinegar
    • ½ c water
    • ½ c sugar
    • ¼ tsp black pepper
    • pinch cloves
    • 1 Tablespoons fresh lemon juice
    • 2 Tablespoons butter

    Instructions

    • Add cabbage, apple, vinegar, water, sugar, pepper, and cloves to a large pot. Cover and bring to a boil over medium heat. Cook about 30 minutes or until tender, but still with a bit of a crunch. Drain liquid. Add in fresh lemon juice and butter, stir everything together and serve warm
