Now that I have had a chance to think about it, many vegetables can be mashed, why not carrots or parsnips? Courgettes as they are called in Chad is the French name for Zucchini. Peanuts are a very important subsistence crop for the people of this poor nation. They make a delicious topping with great added texture in this lovely side dish. If you don't eat peanuts, you could substitute any kind of nut and it would be just as delicious.

Chad Courgette with Peanuts (Zucchini with Peanuts)
Ingredients
- 4 smalll courgettes zucchini
- 1/2 tsp salt
- 2 tbsp butter or oil
- ½ cup unsalted peanuts chopped
Instructions
- Simmer the whole courgettes in about 1 cup of salted water until very tender (about 10 minutes).
- Combine the courgettes and butter then mash to a smooth consistency.
- Top with the nuts and serve immediately.
