    Chad Zucchini with Peanuts (Courgettes with Peanuts)

    Chad Zucchini with peanuts was a real surprise for me. I had never contemplated mashing zucchini before and it was awesome, a perfect companion to the perfectly roasted Chadian style chicken. These recipes from Chad are simple and delicious, you should try them!

    Chad Zucchini with peanuts

    Now that I have had a chance to think about it, many vegetables can be mashed, why not carrots or parsnips?  Courgettes as they are called in Chad is the French name for Zucchini.  Did you know that French is an official language of this African nation?  If you would like to learn more be sure to check out "Our Journey to Chad".  Peanuts are a very important subsistence crop for the people of this poor nation.  They make a delicious topping with great added texture in this lovely side dish. If you don't eat peanuts, you could substitute any kind of nut and it would be just as delicious.

    Chad Courgette with Peanuts (Zucchini with Peanuts)

    Yes, mashed zucchini is delicious, especially topped with some nuts and served alongside roast chicken.  Who knew?

    Ingredients

    • 4 smalll courgettes zucchini
    • 1/2 tsp salt
    • 2 tbsp butter or oil
    • ½ cup unsalted peanuts chopped

    Instructions

    • Simmer the whole courgettes in about 1 cup of salted water until very tender (about 10 minutes).
    • Combine the courgettes and butter then mash to a smooth consistency.
    • Top with the nuts and serve immediately.
